Day 10: Cure for Cravings…Chili!!

Ok, I admit it, I’m a foodie. I like to eat and in large quantities, so to help me work on replacing that, I eat larger than life salads. Hoping the bulk (lettuce, cucumbers, etc.) will satisfy my internal meter. It works for the most part, but salad gets a little routine. So today, after pondering on what to eat for lunch, I came up with chili (cause Wendy’s version is my favorite).  I Googled an easy recipe (see below) and it turned out pretty decent. I added cheese on top and made it even more interesting. Check it out and let me know what you think. YES!! Another day without pasta/rice/sweets, equals to another check in the win column for me!!

So: 24 Push-ups, rest day on squats (bless the Lord), 10,302 steps = 4.03 miles & 40 mins of high activity (even on a rainy day)!!! 80 oz H2O, 7 servings of fruit/veggies, 3 meals, within caloric intake target. BOOYA!!

5-INGREDIENT EASY CHILI from Gimmesomeoven.com

YIELD: ABOUT 4-6 SERVINGS

PREP: 5 MINS   COOK: 20 MINS   TOTAL: 25 MINS

INGREDIENTS:

1 lb. ground beef or turkey*
3 (15 oz.) cans diced tomatoes with green chiles
2 (15 oz.) cans beans, drained (black beans, kidney beans, a combo, or whatever you like)
1 small white onion, diced
2 Tbsp. chili powder(optional toppings: shredded cheese, chopped green onions, sour cream, cilantro, etc.)

DIRECTIONS:

In a large stockpot, cook ground beef or turkey over medium-high heat until browned, stirring frequently.  Drain the excess grease. Add remaining ingredients and stir to combine. Bring to a boil, then reduce heat to medium-low, cover, and simmer for 15 minutes or until the onion is cooked and softened.

Serve warm with additional toppings if desired.

*If using ground turkey, you may need to heat a tablespoon of olive oil beforehand to help cook and brown the turkey.

**You can also make this in the slow cooker.  You just need to brown your meat on the stove before adding it and the other ingredients to your slow cooker.  Then slow cook the chili on low for 6-8 hours or on high for 3-4 hours.
