As I continue down the no rice/pasta/sweet path (I would say no carbs, but I ate popcorn today), I must find ways to “sike” myself into thinking I’m eating them even though I’m not. FOUND IT!! I came across some cauliflower recipes and decided to try one out. To my surprise, with a little improvement, I really thought the cauliflower was a lighter version of mashed potatoes! Who knew?? Per the internet, plenty people already got the memo, I’m just a little late to the party. Thus, watch out folks, I will be trying some more daring cauliflower recipes!
Though I had a good day with sticking to my goal of no carbs, I did get side swiped by the bag of chips and popcorn Hannah brought into my room from the outside…CONTRABAND!!! I was disciplined enough to skirt around the chips, but it wasn’t so good for the popcorn. I indulged, so much so that Hannah and I walked/jogged to the grocery store before it closed to get more. Not good, BUT I jogged and finished my step goal way before midnight! (See how I changed that from a negative to a positive? Lol!!)
So: 27 Push-ups, 75 squats (booty and thigh pain), 11,003 steps (so far) = 4.3 miles & 64 mins of high activity!!! 64 oz H2O, 5 servings of fruit/veggies, 3 meals, I didn’t track calories closely (but, I’m sure I wasn’t too far off).
Drum Roll: I lost another pound!! Sweet…5 total! Bless the Lord!

I modified a cauliflower recipe. My recipe is called:
Garlic & Shallot Infused Mashed Cauliflower (Yep! I’m a Chef..lol!!)
1 head cauliflower, cut into florets
Pam spray
4-5 cloves garlic, minced*
1 Shallot, minced*
1/4 cup grated Parmesan cheese
1 tablespoon reduced-fat cream cheese
1/2 teaspoon kosher salt
1/8 teaspoon freshly ground black pepper
Directions
Prep: 15 m
Cook: 10 m
Ready In: 25 m
Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add cauliflower, cover, and steam until tender, about 10 minutes.
Meanwhile, mince garlic & shallot in a food processor or chopper (really fine). Next, spray Pam in a small skillet over medium heat; cook and stir garlic & shallots until softened, about 2 minutes. Remove from heat.
Transfer half the cauliflower to a food processor; cover and blend on high. Add remaining cauliflower florets, one at a time, until vegetables are creamy. Blend in garlic/shallot, Parmesan cheese, cream cheese, salt, and black pepper.
